World Cocktail Day: Q&A with Jesus
Shaken, stirred, or with a twist—World Cocktail Day is nearly here and we’re celebrating in style. We caught up with Bar Manager, Jesus, to chat all things tipples…
What’s your favourite cocktail on the Bay Bar menu, and why?
My favourite cocktail on the menu is the Toki no Kaori. It’s a truly unique creation. This drink blends the smooth, rich notes of Toki whisky with the refreshing crispness of cucumber syrup, the subtle sweetness of apricot liqueur, and the delicate floral undertones of elderflower.
The result is a cocktail that’s perfectly balanced - refreshing yet complex. The whisky brings depth, while the cucumber syrup keeps it light, and the apricot liqueur and elderflower add a touch of sweetness and floral elegance. It’s ideal for a crisp evening or a special occasion. Even if you’re not a whisky fan, I promise you’ll find yourself falling for this one! These are the kinds of cocktails I’m most drawn to, offering a delightful surprise with every sip.
What do you think the best spirit is?
As a gin lover, I have to say that Tanqueray Flor de Sevilla is one of my favourites. It’s a vibrant, zesty orange and citrus gin, inspired by an original Charles Tanqueray recipe from his travels to Spain in the 1860's. The gin has a delightful aroma of citrus fruits and orange zest, with subtle hints of juniper, vanilla, and spices. It’s absolutely perfect with a good tonic. While it’s not on our menu right now, I’ll definitely consider adding it in the future!
Where do you get inspiration for new creations?
I’ve been teaching myself for 10 years, and as a passionate traveller, I love exploring local food and drink spots whenever I get the chance. Many of my cocktail creations are inspired by my experiences around the world. I enjoy experimenting with new flavours and finding unique combinations, especially when it comes to fruity cocktails with playful twists that engage the senses. I particularly love crafting drinks that surprise guests - where they savour the dominant fruity flavour at first, but then, as the drink passes their throat, the flavour shifts unexpectedly.
Best non-alcoholic option?
I would go for a warming oat coffee with beach views or Corona 0% alcohol in the summer!
What is your favourite thing about Newquay?
My favourite thing about Newquay is the sense of community. Everyone is so friendly, and there’s such a great vibe around town. Of course, I love the Spring and Summer seasons here. With so many beautiful beaches nearby, it’s great for BBQs with friends while watching the sunset - when the weathers on our side, of course!
