Meet the team
Here are some of the Fistral family....
Check in, Chill Out
Our Operations Manager Daniel ensures our guests are always smiling. With 10 years in the hospitality industry, Daniel’s passion is top notch customer service and having spent some of his time at Walt Disney World and Disney Cruise Line, he knows all too well about how to ensure a fabulous or ‘magical’ guest experience.
When not at our adult-only hotel, you’ll find Daniel...
Enjoying the beach in the summer or keeping warm by the fire in the winter months with family & friends at The Red Lion pub.
Number of countries visited...
39 and counting!
You decided to settle in Cornwall because...
A happy accident? Although I love the beaches and lifestyle, family moved here a few years back and my partner and I followed- we liked it so stayed.
Your favourite midnight munchie is.....
I love pizza when it comes to naughty late night eats. The Stable on Fistral Beach is a favourite of mine washed down with their eye wateringly strong Rapscallion Cider.
If you weren't at Fistral Beach Hotel, you'd be doing...
I'd probably be a primary school teacher still, that's what I was doing before joining the team here!
Some notable Daniel hobbies...
Travel is usually the main focus of my time off, which has been quite restricted lately… I also enjoy walking the South West coast path and I play piano at home from time to time.
'Check in, Chill Out'
Our Hotel Manager Odette is on hand to ensure the smooth running of our beachside hotel in Newquay.
If you were a Rockstar, what would your “rider” be?
My own personal therapist for massages, facial etc. Room to be scented with candles and vases of white roses.
What's a secret spot in Newquay that you can let us in on?
The rose garden by the boating lake.
A shocking fact about yourself
I’m double jointed.
Your dream car is...
VW California converted for adventures.
Your favourite tipple...
Whispering Angel perfectly chilled.
The face behind the dishes. Head Chef Daniel is the guy you can thank for those flavoursome dishes that are served in our 2 AA Rosette Restaurant Dune. With a passion for choosing quality meat, fish, dairy and vegetable products each dish on the menu is planned, prepared and placed lovingly
When he’s not in the kitchen, you’ll find Daniel...
On a dog walk and spending time with my son Logan & my partner Lucy.
Any hobbies outside of the kitchen...
Supporting Aston Villa is the main one! I also enjoy playing football for St Erme FC every Saturday, Tennis, Squash, Pool, Snooker & playing guitar...
Favourite meal of the day....
Dinner on a day off, because you can take your time, experiment and cook with a glass of wine in hand.
What's your thoughts about dish wine pairings...
A good drinks pairing can turn a good dinner into a great dining experience that you will remember. I remember the first time I had a bird liver parfait with pedro jiminez, it made me realise how wine elevates the whole dish.
Best place to visit in Cornwall....
I love St Agnes, its the perfect place to walk my dog Narla, it has some great foody pubs and a great beach.
'Welcome to Dune Restaurant'
The service at Dune Restaurant wouldn’t be the same without our Restaurant Manager Neil. With 25 years in the hospitality industry, Neil’s love for customer service continues to grow as he and his team make each dining experience at Fistral one to remember.
When Neil isn’t serving the flavours of Fistral, you’ll find him....
Walking his dog on the beach
Any hobbies outside of the restaurant...
Fishing, cycling and cooking food!
Which is your favourite dish on the Dune Menu
For me it has to be the Tuna loin
Your favourite beach in Newquay is.....
It has to be Fistral Beach, it's right on our doorstep and the surf is incredible.
If you could be anyone who would it be......
I wouldn’t choose anyone, happy with my life!
I've got just the cocktail
You’ll find him in the Bay Bar, mixing, pouring and shaking our Fistral Classic cocktails and serving the best of the bay, but outside of the bar, you’ll find our Bar Manager keeping body and mind healthy at the local Cross Fit centre, running along the golden sands of Fistral or making waves in the surf.
Favourite cocktail on the menu is....
Fig old fashioned. I’m not a whisky cocktail fan but this cocktail as a whisky mixer has the perfect balance of sweet/sour and fruit flavour with intense rosemary aromatics. It really makes it an easy cocktail to drink but not without an explosion of flavour in your mouth to surprise the palate.
Name your favourite dish...
Definitely the Bavette Steak but for an amazing cocktail pairing off our menu Sushi. Chicken, mushroom or goats cheese dishes as well as dishes with mustard will combine with cocktails too for an explosive taste.
What are you doing outside of the Bay Bar...
CrossFit, Running, Surfing, Cinema and Travel.
We've heard you quite like motorbikes...
Yes absolutely, one of my favourite ones is Yamaha YZF R1 2020.
Celebrity look alike is...
Top tip for making the perfect cocktail...
Read about mixology, have passion and thrive in creativity.
Sparkling just like new
As Housekeeping Manager, guests have Martina to thank for creating that fresh and ambient atmosphere to wake up to. When Martina isn’t ensuring all our rooms are in the perfect condition to welcome our guests, you’ll find her socialising with her friends and family in the garden as much as possible (British weather permitting!).
Give us your three top cleaning tips...
Clean as if it's your own room. Use plenty of elbow grease, hard work always pays off. And be happy, a happy person always cleans the best.
Your favourite thing about Cornwall is...
The scenery, because I have travelled and seen many different places but I still think that Cornwall has some of the best scenery.
If you could drive around in any car it would be...
An Audi R8 convertible and I hope we have more sunny weather.

I love a particular duck dish that my husband cooks, it's delicious
